Our Regional Fresh Cuisine
Selected ingredients for sustainable enjoyment
At the Lüsnerhof, we combine alpine tradition with mindful cuisine. Our kitchen is light, digestible, and full of natural flavors. Regional, organic ingredients are at the heart of everything we prepare – fresh, seasonal, and sourced according to the zero-kilometer principle.
Dairy products like cheese and butter come from the Kreuzwiesenalm or from hay milk farmers at the Sennerei Burgais. Organic yogurt and milk are sourced from the Brixen dairy farm (Brimi). Goat cheese is from the Blauschmidt farm in Lüsen, free-range eggs are from Villnöss, wild game from Lüsner hunters, wild herb teas, flowers, and alpine superfoods are harvested from the Schmidthof and Gasserhof farms in Lüsen. Our fine bread is made fresh by the Lüsner baker Gasser. All dry goods, such as organic cane sugar and grains, are sourced from the organic wholesale supplier Ökoring. We also offer organic nuts, spreads, seeds, and vegan alternatives from Koro.
Thanks to close cooperation with local farmers and producers, we focus on short transport distances and ecological practices. This creates a cuisine that is not only sustainable but also guarantees the highest quality and unadulterated taste. The culinary experience at our herb hotel in South Tyrol is complemented by a carefully curated selection of wines from our wine cellar. Our chef and his team create moments of enjoyment that nourish the body and soul, offering lightness and energy.
Our organic vegetable garden in the Dolomites
With great care and love, farmer Raphael and Valeria combine the principles of permaculture with other ecological agricultural practices such as biodynamics and organic cultivation in the vegetable garden at the hotel's own Blauerhof in the idyllic neighboring valley of Villnöss. Each individual Demeter-certified plant is grown from seed by hand. With a view of the Puez-Geisler Nature Park, a variety of new and old vegetable varieties are carefully planted. The result: a colorful selection of crunchy and nutrient-rich organic vegetables that taste particularly authentic and honest. Twice a week, between may and october, the harvest takes place, and the fresh produce from the hotel garden is delivered to our nature kitchen at the Lüsnerhof.
Regional wine enjoyment in a unique atmosphere
In the six cozy, tastefully decorated rooms, every meal becomes a true delight. The evening menu is complemented by our carefully selected South Tyrolean wines.
The new fireplace room regularly invites guests to wine tastings, where renowned regional white wines from the Eisack Valley and fine South Tyrolean red wines take center stage.
For small and big moments
Daily from 12:00 to 14:00, we offer our guests, both from the hotel and the surrounding area, a small lunch menu focused on regional dishes in the restaurant and on the sun terrace.
Our à la carte restaurant is also available for larger events, such as family gatherings and corporate celebrations. Of course, with the renowned quality of South Tyrol’s regional fresh cuisine.
