At Lüsnerhof, we combine Alpine tradition and Mediterranean influences with conscious cuisine. Our natural cuisine is light, wholesome, and full of authentic flavours. Using mainly regional ingredients, most of them organic, sourced from local producers and our own vegetable garden, we focus on short transport routes and environmentally responsible practices. The result is a cuisine that is not only sustainable, but also guarantees the highest quality and unadulterated taste.
A culinary day at Lüsnerhof: the 3/4 Nature Gourmet Board
The aroma of freshly brewed coffee and freshly baked goods delivered daily straight from Luson awakens the desire for a leisurely breakfast. Whether savoury with regional cold cuts and cheeses, vegetable sticks and vegan spreads, or sweet with homemade jams, honey and nut butters. Freshly prepared organic egg dishes and buckwheat waffles complete the selection. Homemade Bircher muesli, organic chia pudding and Ayurvedic porridge are also available for a delicious start to the day. To accompany the wide variety of muesli, we offer regional yoghurt and milk, as well as vegan alternatives and, of course, plenty of fresh, predominantly seasonal fruit, along with a juicer for your morning vitamin boost.
And of course, what should not be missing is hand-brewed coffee or aromatic organic tea. Matcha and cappuccino lovers are equally well catered for – whether with fresh hay milk, oat or coconut alternative.
In the afternoon, guests can help themselves to one of the daily changing soups and the fresh antipasti. Above all, the colourful variety of salads invites you to serve yourself to your heart’s content: beetroot, carrots, cucumber, as well as filling buckwheat or chickpea salads are just some of the many varied creations.
Coffee and cake are, of course, not to be missed at this time of day. The highlight of the cake buffet is undoubtedly the homemade apple strudel. Alongside it, there is a wide selection of cakes and brownies, as well as berry mousse and tiramisù.
In the evening, the natural cuisine at Lüsnerhof unfolds all its sophistication. Following the Terra and Monte-e-Mare principle, vegetarian dishes stand alongside refined fish and meat creations. Prepared with seasonal, regional and sustainably sourced ingredients, each dish becomes a modern interpretation of the authentic flavours of South Tyrol.
From the daily changing selection, each guest can compose their own personal evening menu and is invited to help themselves to the colourful variety of salads to their heart’s content. Vegan, lactose-free and gluten-free menus are also freshly prepared on request with great care and sensitivity.
In the six cozy, tastefully decorated rooms, every meal becomes a true delight. The evening menu is complemented by our carefully selected South Tyrolean wines.
The new fireplace room regularly invites guests to wine tastings, where renowned regional white wines from the Eisack Valley and fine South Tyrolean red wines take center stage.
Our chefs and their philosophy
At Lüsnerhof, Executive Chef Stefan Unterkircher and Sous Chef Stefan Mur shape the distinctive character of our natural cuisine. Unterkircher gives it a clear culinary direction through his deep connection to South Tyrol and nature, while Mur brings creative lightness, a spirit of experimentation and refined finesse. The result is a cuisine that unites regionality, authenticity and the flavours of the mountains in a truly distinctive way.
Our organic vegetable gardens
In addition to our own garden, we source top-quality organic vegetables and grains from Vintlerhof in Brixen-Milland. This organic social farm combines organic agriculture with social projects.
We are especially proud of our own vegetable garden, located at an altitude of 1,350 metres with views of the Odle peaks, nestled in the Villnöss valley. Here, artichokes, aubergines, peppers, tomatoes, pumpkins, various types of cabbage and fruits such as plums, pears, berries and pawpaws thrive – all grown without pesticides, using pure spring water and fertile soil.

In Alto Adige, con la sua radicata cultura del gusto e le sue ricette tramandate nel tempo, questa filosofia è da sempre ben presente. Come parte di Slow Food Travel Odles, anche il Lüsnerhof fa parte di questo movimento e lo rende tangibile ogni giorno attraverso la sua cucina naturale. Così, sapore regionale, patrimonio culinario e piacere consapevole si uniscono in modo del tutto naturale.
